Ingredients

Scale

5 oz canned tuna, drained
2 tbsp mayonnaise
1 tsp Dijon mustard
1/4 tsp garlic powder
1/4 tsp onion powder
Black pepper to taste
1 tbsp diced red onion
1 tbsp chopped fresh parsley
8 slices sourdough or Texas toast
1 cup shredded cheddar cheese
3 tbsp butter
1/4 cup yellow onion, thinly sliced
1 tbsp olive oil
1/2 tsp sugar

Instructions

Drain the tuna thoroughly and flake it into a mixing bowl.
Stir in the mayonnaise, Dijon mustard, garlic powder, onion powder, and black pepper.
Fold in the diced red onion and fresh parsley, adjust seasoning, and set aside.
In a skillet over medium-low heat, melt butter and olive oil.
Add the yellow onions and sugar, cooking for 8 to 10 minutes until deep gold.
Lightly toast the bread slices in a dry skillet or under the broiler for 1 to 2 minutes.
Spread the tuna mixture onto the untoasted side of four bread slices.
Top with shredded cheddar cheese and a portion of the caramelized onions.
Close the sandwiches with the remaining bread, toasted sides facing outward.
Cook in a skillet over medium-low heat for 3 to 4 minutes per side, pressing down gently until crisp and the cheese has melted.
Rest the sandwiches on a cutting board for two minutes before slicing.

Notes

Always drain the tuna as dry as possible to prevent soggy bread. For extra crunch, add a small handful of finely chopped celery to the tuna mix. Do not rush the onion caramelization process as it is essential for the depth of flavor.
