A flavorful sweet potato crust pizza topped with shredded rotisserie chicken, spinach, red onion, tomato sauce, and barbecue sauce.
3 medium sweet potatoes
1 cup almond flour
1 egg
1/2 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic powder
1 tablespoon apple cider vinegar
1 cup pre-cooked rotisserie chicken, shredded
1 cup spinach, chopped
1 medium red onion, thinly sliced
1/2 cup barbecue sauce
1/2 cup tomato sauce
Pinch of chili powder, optional
1. Preheat oven to 400°F.
2. Cook sweet potatoes in the microwave until soft.
3. Peel and mash sweet potatoes with almond flour, egg, salt, oregano, basil, garlic powder, and apple cider vinegar.
4. Spread the mixture into a pizza crust no more than 1/2 inch thick.
5. Bake for 30 minutes.
6. Shred the rotisserie chicken, chop the spinach, and sauté the sliced red onion until soft.
7. Spread tomato sauce and barbecue sauce over the baked crust.
8. Top with chicken, spinach, and red onion.
9. Drizzle with additional barbecue sauce.
10. Bake for 10 minutes more.
11. Slice and serve.
For extra heat, add a pinch of chili powder to the crust.
Keep the crust no more than 1/2 inch thick for even baking.
Refrigerate leftovers promptly and use within 3–4 days.
Reheat leftovers to 165°F.
